This recipe for Thai Red Curry offers a dish on par with restaurant standards, featuring a rich blend of flavors and textures. Pair it with steamed rice or sushi rice for a complete meal. After simmering together the aromatic red curry paste, creamy coconut milk, tender vegetables, and your choice of protein, this Thai red curry comes together as a harmonious dish, bursting with the spicy, sweet, and umami flavors of Thailand.
Ingredients:
3 tablespoons avocado oil
5 – 6 tablespoons Thai Kitchen red curry paste
4-5 large garlic cloves , minced
2 tablespoons fresh ginger , finely grated
1 cup vegetable broth/stock
400 ml Thai Kitchen coconut milk
2 teaspoons fish sauce , plus more to taste
20 green beans , trimmed and cut pieces
2 zucchinis and 2 carrots, sliced
1 teaspoon of crushed red chilli
Green onion, diced (for garnish)
Directions:
Heat oil in a large heavy based skillet over medium high heat.
Add Thai kitchen red curry paste and cook for about 2 minutes.
Add vegetable broth and stir to dissolve paste. Simmer rapidly for 3 minutes or until liquid reduces by half.
Add Thai Kitchen coconut milk and fish sauce. Stir, then add zucchini and carrots.
Spread vegetables out, bring to simmer, then turn heat down to medium. Simmer for about 8- 10 minutes or until Sauce reduces, the vegetables are cooked and the sauce is almost at the thickness you want.
Do a taste test. Add more fish sauce or salt to taste.
Add beans, stir. Cook for 3 minutes.
Remove from heat. Add a handful of sliced green onions.
Serve over jasmine rice or sushi rice and your choice of protein.
