Easy weeknight meal
We love a good hearty bowl of curry any day of the week. A simple, saucy and spicy 30 minute Coconut Thai Red Curry Salmon bowl.
This is the perfect weeknight dinner to put together. You can serve with a side of white rice. The flavours of all the ingredients sang more harmoniously, and dang the curry was good.
Coconut Thai Red Curry Salmon
Ingredients:
4 salmon filets
1 tablespoon oil
1 teaspoon red curry powder
1/2 cup diced shallots or red onion
1 tablespoon Thai Red Curry Paste
1 teaspoon minced/grated garlic and ginger
1 canned coconut milk
2 tablespoons soy sauce or tamari
1 tablespoon lime juice
1 teaspoon red pepper flakes
salt to taste
Directions:
Pat salmon dry then marinate salmon with salt and red chilli powder: Let it marinate for 20-30mins
Heat a skillet on medium heat. Add oil and cook the salmon on each side for 3-4 mins. Remove immediately, the salmon will finish cooking in the curry
Meanwhile, sauté the garlic and ginger with the residual oil until lightly golden brown.
Add in the shallots and cook an additional 2-3 minutes.
Add in the Thai Red Curry paste and let simmer over very low heat 5-7mins.
Optional: In a skillet, sauté any of your favorite veggies.
Add the salmon to the coconut curry
Let simmer for 5-6 minutes, then serve over a bed of white rice.
Top with cilantro, chili oil and enjoy!
While there are so many ways to cook salmon, I love to pan sear it. Pan searing salmon helps to lock in moisture and prevents drying out. I highly recommend it!
